As promised, here’s the super simple recipe for the super easy cheesy lentils – the dish from my childhood caravan holidays in Dorset.
- 1 large onion
- plenty of garlic (at least 1 clove, if not 4 – depends on your personal taste)
- 200g red split lentils, washed
- water (double the amount of lentils)
- lots of grated cheddar
- lashings of black pepper
Chop the onion, crush the garlic and fry them together in a little olive oil till they have softened. Next, add the lentils, give it all a stir then pour in all the water and bring it to the boil. Then turn the heat down till the mixture simmers and leave it with the lid on for a good 25 minutes.
Towards the end of the cooking time, throw in the grated cheddar and mix well. Serve soon after, with potatoes and a tomato salad. This is nourishing, nutritious, cheap and yummy!
A big hit with the toddler too – but beware of the salt content of your cheddar.
