Too hot to cook! Too hot to even be that hungry. So I whipped up a quick summery salad for myself after goblin had hummus sandwiches and banana for dinner (which I really didn’t fancy, call me crazy).
I layered lettuce and rocket in my luscious gigantic bowl plate – drizzled with balsamic vinegar and olive oil. Then added chopped spring onions and ripe avocado.
Then I chopped up some peri peri chicken slices I got from Aldi’s deli section today, added a dollop of red pepper hummus and drizzled the lot with a little sweet chilli sauce and boom!! Absolutely delicious accompanied by a kiwi and lime cider (also from Aldi, god I love Aldi). Super refreshing, filling but nice and light.
You can add bits and pieces as you wish. Have tuna instead of chicken. Add Mayo. Whatever takes your fancy.

- Rocket (handful)
- Lettuce (handful)
- Balsamic vinegar
- Olive oil
- Sweet chilli sauce
- 4 pieces of Peri peri chicken (cooked and ready to eat) sliced
- 1 avocado
- Dollop of red pepper hummus
- Black pepper
