Courgette & Parmesan Croquettes with Oven Roasted Sweet Potato Chips

I found this recipe while flicking through Ella’s Kitchen First Foods book, uninspired by the meagre supplies in the fridge.

Magically I had all the ingredients and as the croquettes were in the finger foods section, goblin’s mood this week has made all other food impossible so I thought I’d give them a try, with some sweet potato chips.

I had also intended on a side serving of buttery peas but failed miserably so I consoled myself with the whole courgette that went into the croquettes.


Croquette Ingredients:

  • 1 whole courgette, grated.
  • Parmesan (plenty of, grated)
  • A little flour
  • One egg, beaten
  • Oil

Method:

I grated the courgette and squeezed out the excess water. Added the Parmesan and beaten egg. Mixed it up. Thickened it with the flour and set aside.

I then peeled and chopped up the sweet potato and popped them in the oven with a little olive oil.

Then I heated oil in a frying pan and spooned out the croquette mixture/batter into patty shapes in the pan.


A mess I know. Aesthetics aren’t my strong point.

At this point, goblin was shouting and pointing and generally making his angry presence known so CBeebies and cucumber saved the day, and my sanity, whilst the croquettes cooked.


They started looking like this so I figured we were on the right track.

In the end they were pretty tasty. And goblin ate them up.

It’s Friday at last. We have very hot weather forecast (not so much fun when you live in a top floor flat with no garden space for hot bodied toddler) and some nice plans to look forward to.

Should be a blog post in there somewhere though. A hot weather with toddler survival guide perhaps or things that one notices when meeting up with old friends who haven’t met your child yet and are about to see a new you….
