Food: Homemade gluten free pizza

I gave this one a whirl on Friday evening after my parents gave me a couple of gf pizza bases. 

It was actually delicious, I’m glad to have found them out!! Usually gluten free pizza bases taste like actual cardboard, but these were light and fluffy and delicious. 

Here’s what I knocked together.


  • Gf pizza bases from waitrose 
  • Tomato purée
  • Feta cheese
  • 1 red onion sliced
  • 1 red pepper
  • Olive oil
  • A pinch of brown sugar

After putting the oven on at 200, I fried the onions in a pan, in a little olive oil. Before adding the sliced pepper, I added the pinch of brown sugar to the onions and caramelised them. I find the sweetness really works well with the feta, especially on a pizza. 

I added the pepper to the pan and gently fried it a bit before taking the pan off the heat and leaving them to one side. 

I prepped the pizza base by spreading about a tablespoon of tomato purée across it evenly. Then I poured over the caramelised onion and pepper, then covered the lot in chunks of feta. I also sprinkled some oregano across the whole thing then whacked it in the oven!

It was cooked in 12 minutes – and I forgot to take a picture of it because I was busy eating it! My bad.

Delish though.
